UTSA Honey Research Project

UTSA Research Project This Fall

Dear AABA Members,

As some of you may know, I will be teaching the “Medicinal Properties of Honey” class at the UTSA this Fall. My class was designed for 20 students, and it filled very quickly. With my students, we would like to analyze 100 local honey samples from San Antonio area for their bioactivity potential; thus, we need your support for this teaching/research class.

You may donate raw, unfiltered, comb, or cream honey from any season. We need at least 4 oz of any honey sample in a glass jar or plastic container. More than one sample can be submitted as long as each sample comes from a different area and/or from a different honey flow season. We are working to give you certificates from UTSA mentioning about the bioactivity potential of your honey. Please see the attached example used for my Michigan honey study. According to several studies, medicinal potential of honey, such as wound healing or immune-boosting, is measured through its antioxidant and antimicrobial levels, and correlated with its color and pH. If you are interested in donating your honey for this unique project, please fill out the form at this link in advance and bring your sample(s) to the AABA July 19th meeting at 6:00 PM at the San Antonio Botanical Garden. Alternatively, you can also use the attached PDF file, fill it out, and bring with your sample(s) to the meeting. If you cannot bring your sample(s) to the AABA meeting, you can also mail them to my UTSA address below. Thank you for your interest and contribution,
